The elements of literature are complex, pattern-based phenomena and pulling them apart uses many of the same problem solving skills as mathematics. The more advanced literature studies utilize high level problem solving that would impress even the most gifted math major. The same thought patterns are applicable in both settings.
Also, you could get duel degrees in mathematics and English or writing/journalism, and pursue jobs in textbook writing, editing, writing for mathematical and scientific magazines, writing pop-science/math books, and the like.
There's plenty of options out there... You'll just have to be creative. :).
