White is typically the pure color (By the way, this doesn't apply to people. That would be racist.) according to the church, probably since it is the base for all colors. Therefore, since Jesus was pure, the candle stands for him, although really, the candles could just stand for purity, and not Jesus.

Is the pope a biblical position?

Yes, it is biblical. Jesus is, of course, the rock, the foundation of the Church. However, in John 1:42, Jesus changes the Apostle Simon's name to Cephas, or Peter, a name which means "Rock". Now we know from scripture that Jesus is the Rock, or Cornerstone (1 Corinthians 10:4). Therefore, it can be assumed from this name change that Jesus is handing on to Peter what He Himself is, Rock. Once Christ ascended into Heaven, Peter became the new rock, foundation or earthly leader of the Church. It stands to reason that Christ meant this to be an ongoing position as it would make little sense to have the Church without leadership after Peter died.

Members of the Church of Jesus Christ of Latter-day Saints (the "Mormon" church) believe that their church is a restoration of the original New Testament Christian Church founded by Jesus Christ during his mortal ministry. Mormons believe that the doctrine and authority of this original church was restored to Joseph Smith by Jesus Christ and other Biblical authorities. So, some may answer 'Jesus' and some may answer 'Joseph Smith'. They are both correct, because it was Jesus acting through Joseph Smith.
