With a 1/2 stock and die and depending if I wanted left or right hand threads which die I would use

If I remember correctly, the pipe size is the inside diameter, so it would depend on the thickness of the wall, as to what size it would fit into.

That's 3/4" pipe, not 3.4" prehaps it would deliver more pressure through the 1/2 inch pipe than 3/4 inch. 3/4" pipe will be less restrictive over the course of the run. Otherwise, no. 1/2" Copper Pipe will do fine, since it has a smoother bore, less restrictive, no lime and rust build-up. The only reason for you to use 3/4" pipe is if you want more volume. The pressure remains the same.
You use a Die to cut the threads. A Die is like a nut for a bolt. It is designed to screw onto the end of the pipe and cut the threads. Clamp the pipe so that it cannot turn, start the die on the pipe while putting oil on the pipe. There is special thread cutting oil but any motor oil will work. This make the cutting easier. Cut about 1 inch of threads on the pipe. Make a couple of turn and back the die up a half of a turn. Do this until you have an inch of thread. Backing the die up gets the shavings out of the cutting grooves. The new threads will be very sharp and will cut if you wipe the oil off with your hand, use a rag. The dies are sized for the size of pipe, 1/2, 3/4 and 1 inch are the most common.
