Its not easy. You'd need a very, very good reason and an order from a court to do that.

If, for example, the mother were to die, the father is the next-of-kin, regardless of where he is, and he would become fully responsible for maintaining the child. The nationality of a child is governed by the nationality of his/her parents. The fathers nationality is very relevant.
The place where the government stores that information is on the birth certificate. A birth certificate is not a convenience, it is a legal record that sets up a lot of legal rights, responsibilities etc. The government is most unlikely to erase all knowledge of the relationship without a court order, which order will be very hard (perhaps impossible) to obtain.
