Since you are an adult there are several things you can do. You can confront your parents on this and they can either accept him or not. Their racist views do not need to impact you if you don't accept them into your life. Or you can move away from them until they are ready to accept your boyfriend. You can give them the choice of acceptance or not seeing you/him again. People make choices and we can not change them. They may surprise you and not be as racist as you think they are. Either way you have to live your life and be with the person you care most about.

In my opinion you and your boyfriend should sit down and talk to your parents. See if there is anyway they will accept him and show the good qualities that he obtains.

Why can't my Indian boyfriend love me enough to tell his parents about me?

People of Indian descent have some traditions that seem very strange and backward to a modern world, such as arranged marriage and chastity/celibacy until being married. Because of this, being with someone you aren't married to is fairly scandalous and brings dishonour to the family. He isn't quite prepared to abandon his culture and disrespect his parents, so he won't tell them.
