As with a person, try to be gentle and friendly to the hamster until they are acquainted with you. Don't try to take them out too much at first, as this may just result in a bitten finger. Start with giving your hamster some treats from your hand. You should soon be able to take them out, and eventually feed your hamster food right off of your hand--even tiny little grains. Before you know it your hamster will be your best friend and you'll live happily ever after :P....but seriously, there are a lot of hamster books at the pet store and at the library which tell you even more about how to deal with a new hamster, and a shy hamster. :)
I think you can only get salmonellosis from a hamster but its very very very very VERY rare to get it; your hamster probably wont have it if he/she looks fine when you get the hamster. but anything else i dont think you can get from a hamster.
