To set the area of an Excel worksheet that will be printed select the range that you want to print and go to the File... Print Area... Set Print Area menu. You can also hide columns that you don't want to see on a print-out by right clicking on the column header and selecting Hide.

The default option is to only print the current worksheet when you print. In the Print dialog box there is an option to tell it what you want to print, even down to selected cells only.

The question is not clear, but if your are talking about when you print the worksheet, I believe the answer you want is page break.
It's called Print Preview, and it's under the Filemenu in Excel.
If you go to the Page Setup on the File menu, and then the Sheet tab, there is an option to print them or not. In Excel 2007, go to the Page Layout ribbon, and you'll see Gridlines having both a View and a Print option.
Normally the whole set of data in the worksheet or the current chart sheet or the selected print area if one has been set.
