I have loads of films on my 250gb ps3 hard drive and am about to upgrade to a 500gb disk how can I transfer the films easily without having to use a usb stick?

I don't think this is possible. I don't think PS3 has the ability to copy over the network to a PC.
However, you could always connect the PS3 hard drive that you swap out to your computer or laptop.
That way it would almost be like having an extra hard drive in your computer with all your movies on it.
