In fact in many places around the world it's taught that there is only one single "American" continent. This "North America" and "South America" concept is just a definition coming from the United States, as to clarify the whole continent from the USA, which is commonly known as "America".

Why we call our country America when America is a whole continent from Canada through Argentina?

You are correct in saying that America is a continent (actually three: North America, Central America, and South America) and not a country. I guess since our country's name is The United States of America, it is just simpler to say America and call its citizens Americans. Someone used a term for US citizens that I thought was pretty short and simple: United Staters

Is it 'Just between you and me or Just between you and I'?

The pronoun 'I' is the subject pronoun; the pronoun 'me' is the object pronoun. The correct phrase is, "Just between you and me..."; because 'you and me' is the object of the preposition 'between'.

Do you say on a continent or in a continent?

You say "on a continent" when referring to a specific location within the continent, such as a country or city. You say "in a continent" when referring to a general location within the landmass of the continent. For example, "I live in Africa" (general) vs. "I live on the continent of Africa in Nigeria" (specific).
