If a WikiAnswers contributor was born on February 29th - would the age on their profile change on February 28th or on March 1st in a common year?

If it follows the customary practice, it would change on March 1, which is "the day after the day before their birthday." This is an established protocol for "skipped birthdays" that do not occur in any year except a leap year. February 29 would have occurred at one second after midnight on the 28th, but didn't.
In some cases, where information has to be updated by month (birth month or age eligibility), this will be done on February 28 every year rather than on the 29th, as a matter of convenience and consistency.
As for birthday celebrations, it is up to the individual as to if and when it is celebrated.
