If you refrigerated it right away and it is being kept around 40 degrees Fahrenheit, it should be fine for 3 or 4 days. Just smell it and taste it.

You should probably remove the meat from the refrigerated carcass within a day of cooking. That will maintain the best flavor of the meat and make it easier to store. I prefer to do that task right after the meal is finished.
If you plan to use them right away, then don't. If you want to keep them longer, then they should be refrigerated.
It makes the breast meat more moist and tender just as basting does cooking up right. It does not really make a difference as usually turkey dries out if it is not basted throughout cooking time as well as giving it time to sit after cooked or if it has been cooked too long. It does become a little more greasy cooking upside down but tasty.
