Carve off every bit of turkey from the carcass. Put into separate plastic containers and put in the refrigerator for up to 3 days. At 3 days, best to put the unused turkey in the container into the freezer. It should be used within a month or two, once it is put into the freezer. Stuffing needs to be removed right after the turkey is cooked and put into a container. Whatever is not used in the next day, should be put in the freezer.
