Depends on the color of vegetables you are chopping ...

I would always use a board that gives a contrast so I can locate small parts easily.

Don't use black ... black boards look like you are planning to kill someone.

Never use multicolored. Leftovers are harder to spot.

Maybe use white ... its easy to clean and looks tidy, too.
