It is important to prune and trim trees of varieties. The main reason to trim a tree is the remove the dead and dying branches and lets the trees resources be sent to the living part of the tree and it helps promote new growth. Winter is the best time to prune because with the removal of the dead branches that tree is ready for spring.
The optimal pruning time will vary from one plant to the next, generally the best time to prune is late winter or early spring before the plant starts to grow again.
Apple trees require pruning twice a year. In summer shorten all the new shoots by two thirds, in winter prune back to one bud from fruiting spurs.
I will depend on the type of trees. cherry trees should be pruned in the fall but some are best pruned int he summer.

The best time to prune not only fig trees but all fruit trees in the south (including Louisiana) is in February. Luckily fig trees are very productive even without a lot of pruning so you can prune just a bit or a lot depending on what you like. The recommendation for pruning however is to prune dead, damaged and diseased limbs as well as tree limbs that are rubbing together. If you stick to that recommendation you will have a high yield of fruit and a healthy tree.
