If you played Oblivion my suggestion is that you join the Stormcloaks, as it makes more sense to me. I don't think the Stormcloaks will care what race you are when they learn you're the Dragonborn.

the imperials are unruly and they almost beheaded you for a lesser crime

Okay. So, if you are asking this question, think: "Am I ready to kill in the name of my side?" Are you ready to put an unstoppable chain of events in motion? If you pick a side, the change is permanent. You cannot change sides. I chose Stormcloak.
Reasons to join the Empire:
They want to unite Tamriel so that it is a stronger continent. The Empire seems like a reliable government. They control most of Skyrim as well. The Imperial armor is better than Stormcloak armor, the Imperials are not racist and many are happy under rule of them.
Reasons to join the Stormcloaks:
I believe in independence. The Stormcloaks wish to restore Skyrim to its former glory. They want the old ways back. Why did Talos worship have to be banned?
Plus, Ulfric and Galmar were once Imperial soldiers. They quit because the Empire surrendered like cowards to the Aldmeri Dominion. The Thalmor torture innocent Nords and secretly capture people, too. The Stormcloak leaders are also nicer than the Imperial ones. For example, Galmar and Ulfric don't tell you to flip off like Rikke and Tullius do. Maven Black-Briar becomes Jarl of Riften if the Imperials rule, and she is a nasty piece of work. Plus, if you kill the rebel Stormcloaks, the last hope for freedom is destroyed. The Stormcloaks are also less sexist than the Imperials. The Imperials don't let as many women become soldiers.
It's up to you ultimately. The Stormcloaks have put corrupt people in charge, but the Imperials have too. Both sides have committed crimes. But you have to choose.

yes u just have to do quests for the empire like you did for the stoarmcloaks and also help the empire take cities and bases

If you support the Stormcloaks for the Civil War quest, then yes, Jarl Ulfric will become High King of Skyrim. If you join the Imperial Legion, he is killed.
You can start the Jagged Crown quest, and take the crown to the leader of the opposing faction. So instead of returning the crown to Ulfric, take it to General Tullius instead. However once you complete that quest, that's the point of no return.

I assume u mean the battle for whiterun u cant stop it if you join sides but if u dont join impearials or stormcloaks it will just stay the same and u wont have to fight and the main story line will be differnt.

By asking around in Whiterun. Usually you can just talk to a bartender in one of the inns and ask for rumors or information. This will give you the Miscellaneous Task "Join the Companions". You can talk to the leader of the Companions in Jorrvaskr, their base in Whiterun. Jorrvaskr is located in the small area in front of Dragonsreach. It is a large building to the east (in whiterun)
