PIR's are passive infrared detectors which operate when ever a warm body radiating in IR moves. One can set a threshold for amount of IR and hence indirectly for a given range and size of body temperature.

So its obvious that on open areas this will not work as any animal could also trigger the alarm. However this alarm could be used to trigger a camera that is being monitored. If the monitoring has to be automatic than a pattern recognition software will have to used to ensure that a zone is being or has been infiltrated.

PIR can be used more effectively in an closed room situation by coupling it with that zone is being infiltrated, that is infiltration will be from a window/door. Now a magnetic door switch can be used to detect the presence of the burglar.

Yes, a PIR can be used for an entry/exit zone, but if you are using to protect the door as well as a room, I would recommend you lower the entry delay time to as low as possible.

How do motion detectors work?

Most motion detectors work on the principle of the Doppler effect. It's applied to the transmission of an ultrasonic signal and the comparison of the return or echo to what was transmitted. Any difference is caused by Doppler effect. Something was moving toward or away from the transmitter of the detector, and this caused an "apparent" change in the frequency of the echo. Motion detectors used with security systems are passive infra-red (PIR) motion detectors, sensing both motion and heat to detect an intruder.
