Continue charging up the lazer lance as you would to fend off a bird rocket. When you get to the mother Phoenix, fire the full blown lazer right below its neck. Do this about 4 times and it will go down.
NOTE: When doing this aviod the rockets the Phoenix shoots. When shooting, it does not move so you can aviod these pretty easily. Also, the Phoenix will come up behind you so be careful

This can destroy the torpedo birds, or a whole bunch of the "bee" birds, or eventually the Mother Phoenix.
