Salmon is a common one easily obtained. Anchovies, herring, mackerel and sardines are other oily fish from cold water that are high in omega-3 fatty acids. There is some risk of heavy metal poisoning when consuming these fish, depending on the source. Additionally, there are fat-soluble toxic chemicls that may also be present, like dioxin or PCBs. The wise consumer will educate himself. The omega-3 fatty acids in capsule form have probably had toxins distilled out of them, but anyone considering a purchase should do some homework. One might ask questions at the point of sale.

Foods high in saturated fatty acids are mostly from animals, but are also found in a few plants. Foods such as: Beef, Veal, Lamb, Pork, Duck Fat, Beef Fat, Lard, Poultry Fat, and Butter. As well as Cheeses, Milks, Heavy Creams and other products that are made from either Whole Milk, or 2% Milk. The plants included in this group are: Coconut, Coconut Oil, Palm Oil, Cocoa Butter, and Palm Kernel Oil. These oils are most often listed as "Tropical Oils". Saturated Fatty Acids are responsible for High Cholesterol. These should be greatly limited, or even omitted by people with High Cholesterol.

Glycerol and fatty acids are found in what type molecule?

Unreacted fatty acids are rare in nature, but most fats and oils are triglycerides of fatty acids, and the acids can be recovered by hydrolyzing the triglycerides. This process is sometimes called "saponification" when the hydrolysis is aided by strong alkali, as in that instance the primary products (aside from glycerin) are salts of fatty acids, which are often good soaps.
