This is because :1) 98% of it is present in oceans and can't be used as it is salty2) 2% of it is found frozen in the form of icebergs and glaciers or on mountains as snow.3) The rest 1% is present underground or as surface water in rivers and lakes i.e. fresh water.
The majority of weight loss is in the form of water when the diet first starts. After the initial period, there is more fat loss.
There is no fresh water in Antarctica. All the water on the continent is frozen. When heat is applied to it, it becomes fresh, potable water.
