What is Lutefisk?
Norwegian in origin, Lutefisk was first mentioned in the Norwegian literature of Olaus Magnus in 1555. It describes how lutefisk was prepared and eaten. Stockfish must soak in a strong lye solution for two days and two nights (48 hrs), it is then rinsed in fresh water for 24 hours before it is cooked and eaten. It is served with salted butter.

Lutefisk(lye fish) which is traditional fish made from stockfish and soda lye. Pinnekjøtt is a main course dinner dish made of lamb. Smalahove is a dish made from a sheeps head. The skin and fleece of the head is torched, the brain removed and the head saltet, sometimes smoked, and dried. all these dishes are usual to eat for Christmas and they all have long traditions. My personal favorite is Lutefisk. I have not tasted Smalahove, but i think it would represent Norway in a good way.

How does lutefisk taste like?
I tried lutefisk 18 years ago. My experience was that it taste like solidified mineral water that popped in your mouth. I didn't find it repulsive, but I won't be rushing to try it again.
