Because, (unfortunately) Answers adds the questions you answer or edit to your watchlist by default. Each time you edit or answer a question, you need to untick the 'awatchlist' option by the orange 'Submit Answer' button.

In order to stop getting boring questions about electricity just for one, you would need to exit out of the program you are using and choose another category. It depends on what system you are in as to how you change categories.

No, categories and subcategories are based on need. If the site starts getting a lot of questions on a company (or any other subject), then a category will be added to help organize those questions.
Why are so many simple questions unanswered?
Over and over again, I am finding and correcting questions that are not in the right categories. When people look for questions to answer they typically will search for unanswered questions in categories of interest.People frequently repeat their question in the answer window, presumably thinking that this will help them get an answer. Instead, it marks the question as "Answered", reducing the chances of getting an answer.In the case of what might seem easy questions, I very often avoid these because there are many young people who visit the site; we want them to find things of interest and to find lots of questions to which they can contribute.

We are slowly going through and redoing many of the categories. This is to streamline the tree, and to reduce overlap. This will make it easier on everyone to find where things are or where they should go. It is an ongoing project.
