When sizing power sources, you must match voltage (which you have done) and make sure the supply can supply enough current to the electronics. If your supply is the 800mA, and the equipment using this needs 2500mA, then the power supply is undersized. If the supply is the 2500mA and the user is 800mA, then your power supply is oversized, and will work just fine.

yes you can you will have to wire up the speakers in parallel because with 8ohm it gives too much resistance and the amp will produce unwanted sound i.e. low volume.

Yes, but you need a big industrial chopper/mixer! Really need more information here. The total will be 2.67 ohms. If it is a solid state amp that is rated to go down to 2 ohms you should be OK. The 4 ohm speaker will get receive twice the power of the 8 ohm. If it is a tube amp that is designed for 2-3 ohms ( not likely) it would also be OK for the amp.

How do you calculate DC link capacitors?

Its a very difficult subject to which most of my fellow designers estimate the ripple current in the caps and then select capacitors that can handle that current. The idea of voltage droop om most DC links can be forgotten because of other compensators such as a lower BEMF motor. The problem is to get as much life out of the caps as you can and that's to keep them cool as you can. Assume that every amp delivered from the DC like is an amp of ripple current and you should be OK.
