Mythology comprises the whole of stories about the Gods and Heroes and their interactions with the world, first to explain nature and the divine, later as allegories teaching higher truths about the nature of the Gods and the Kosmos. Mythological tales were a mostly oral tradition, and many of the ancient stories, or variations on known written down stories, are probably forever lost, so that we are left with only a subset of the original set of stories and variations.

Nomos Arkhaios or Ancient Custom is the Hellenic way of thinking and reasoning, the Hellenic worldview, and the Hellenic way of doing things / practicing the religion. If new elements where introduced to the religion from other peoples, or the religion was being put together with another religion (like Greco-Egyptian polytheism), they employed syncretism to resolve any issues that may arise from this to ensure a good, logical and complementary approach. Anything that contradicted Nomos Arkhaios, the Hellenic worldview and religious practice, was adapted so as to be recognizably Hellenic.
Lastly I wanted to say that the Hellenic religion is not dead. Hellenismos or Dodecatheism is the reconstruction of the ancient practices and beliefs of the Hellenes in the modern day. This is NOT neopaganism (which is eclectic and just makes things up along the way), but honestly seeks to reconstruct ancient religious beliefs and practices.
