Since you would be thoroughly cooking it which would kill any vegetative cells of bacteria, your best indicator would be the smell, texture and appearance of the meat. It could be just fine. But give it a sniff for off-odors and check the meat and juices for sliminess and off-colors.

Double check to make sure what the date is supposed to indicate. Sometimes it might be a "sell by" or a "best if used by" instead of being an actual expiration date.
