Sailfish ususally eat the classic bait fish, while kite fishing you may want to use a little bit bigger bit opposed to if you see one tailing and you cast a bait. For kite fishing, I'd recommend a herring or even a gogelei you could use a sardine which is actually a really good bait for sailfish, but I personally would save those for my sightseeing
