It is produced by the processes of living organisms which draw in calcite to construct their shells and structures. The shells and structures that remain (the clasts in this case) after the organisms have died become cemented together into the rock coquina.

Let's see--a rock composed of rounded pebbles cemented together is conglomerate; cemented sand grains forms sandstone; rock salt forms from evaporating solutions--that leaves coquina, a rock formed from the shells of marine organisms which definitely fits the definition of organic. Must be coquina.
