There are two substances from aloe vera, the clear gel, and the yellow latex. When harvesting Aloe, especially if you are allergic to latex - you need to stand the leave on a paper towel for 15-30 minutes, to allow the latex to seep out. The larger the leaves, the longer to seep out. But there definitely IS latex in Aloe.
