Almost all cheese is gluten-free. Cheese sold in the block such as Parmesan will be gluten free. Some cheap brands of pre-grated cheese are bulked up with flour of some sort and aren't worth buying in the first place, but if you have no other choice check the label carefully.

It depends on what kind of cheese you get. Some do. Mostly all regular cheddar cheese does not, but some people use gluten for a flavoring. Gluten consists of Wheat, Rye and Malt.
