Many sites offer corn muffin recipes. Try searching on Best Muffin Recipes and look at that one. Variations of the corn muffin exist so we suggest trying a few. Country Muffins is also another good one.

The basic recipe for corn chowder is 2 tablespoons butter, Extra-virgin olive oil, 1 onion, diced, 2 garlic cloves, minced, 6 sprigs fresh thyme, leaves only, 1/4 cup all-purpose flour, 6 cups canned vegetable stock, 2 cups heavy cream, 2 Idaho potatoes, peeled and diced, 6 ears corn, Salt and freshly ground black pepper and 1/4 cup chopped fresh parsley leaves. This is a basic recipe that you can make more exotic.

Because it's warmer down there and the growing days are a little longer than up north. Also, there is good soil down there that is best for growing crops like corn.

It probably doesn't taste very good now. Fresh corn-on-the-cob should be refrigerated right after harvest for best flavor. At this point, you might as well eat field corn.
