The double door will usually work out better. You will be able to only open the compartment that you need, keeping the air in for the rest of the refrigerator.

Single compressors are used for both the freezer and refrigerator. Normally they pump cool air into the freezer and then into the refrigerator portion. This causes problems usually when your loading groceries and both doors are open. This causes moist air from the freezer to be pumped into the refrigerator at high rates. This can cause freezer burn to happen more quickly and can cause the refrigerator side to pick up too much moisture causing spoilage. Now a double compressor is just what it sounds like, one compressor for each compartment. They work less and much more efficiently to keep the proper temperatures and moisture levels.
