Can police search for evidence if asked for proof of a search warrant and they say it is on its way but never produce any warrant?

Yes, all they have to do is have knowledge that the warrant was signed by a judge. There's really no reason to BS you. If they were, then their whole search would have been in vain, because anything they found would be inadmissible in court. If they never produce a search warrant, then they have indeed violated your rights under the 4th amendment, and anything they find CAN NOT be used against you, as stated above.

Can search warrant be served on Sunday?

Yes. A search warrant can be signed at anytime. After it is signed the officer has 96 hours to execute it. Normally Officers will get the warrant signed and then execute it later that night or the next morning but they can do it anytime in the valid 96 hour period. (in Illinois at least, cannot say for sure in other jurisdictions).
