Typically one molecule of a fatty acid has a hydrophillic head full of phosphates and a long tail hydrophobic tail full of carbons. Oils that stick to your skin would look greasy because their tails are sticking out; soap (which are fats), can pull that off for you.
Fats could refer to butter and animal fat, which is solid at room temperature because they are mostly saturated--their tails don't have any kinks and they're all single bonded carbons, which makes them pack better and become a solid. Oils have kinks in them, which makes unable to pack as well, so they are liquid at room temperature.
