Fleece lined jeans would fit you the same way a regular pair of jeans will fit you. The only difference is that fleece lined jeans are lined and are therefore thicker. They are great for cold winter days.
Plush is WAYY softer than fleece. Fleece are often smaller blankets than the plush but are comfortable as well. Plush will cost you more because the furs on them are much longer and softer and do not show age as much. Plush is used for more indoor settings often times on beds and couches. Think of fleece blankets as a travel sized plush.

Polyester fleece (polar fleece) is knitted. It is made in a similar way to sweatshirt material. Sweatshirt material has what is called a 'floating yarn' on one side (fleecy has these yarns on both sides), which is a yarn that only loops through the fabric infrequently so it creates loops. This side can be un-brushed (with one side like terry-towel) or it can be brushed (fuzzy on one side). This brushing technique is what makes polyester fleece so fuzzy.
