There are approved Teflon tapes for "gas" but it depends on the HJA and what type of "gas" your asking about
Install in gas line to shut off gas to building after gas meter, or to isolate an appliance off a gas line.
If you are running natural gas or propane, gas teflon tape. Otherwise, any white teflon plumbers tape is fine.

Wrap the pipe threads with a thin layer of yellow tape and then screw the pipes together. pretty simple. If you can't do this then you shouldn't be messing with gas!
To test a pressurerized gas line apply soapy water to all connections. You will see bubbles appear if there are leaks. I see plumbers do this at the houses I work on.

I assume there is not a shut off on the supply side of the line. If you are used to working with gas, you can do it with the line charged, but it is probably best to shut the gas off at the main. If there is not a shut off valve where the flex line connects, I would put one there now. Then it is just a matter of changing the line. Do not use any pipe dope or tape on a gas connection, at least on the flex line. This is a flare fitting and does not require it. The valve to pipe connection is a plumbing connection and should have dope or tape on the threads.

Most areas require that gas lines be run by plumbers and then approved by an inspector. Most gas grills use propane as fuel, running a gas line to the grill would not be enough. There are grill conversion kits to make your propane grill run off of the natural gas line in your home. These kits can be found at most stores that sell or service grills.
