Here's a good recipe for an incredibly indulgent grilled cheese sandwich with bacon and tomatoes, best served in peak tomato season with REALLY good, flavorful tomatoes.
Slowly cook good-quality thickly sliced applewood-smoked bacon to golden-brown perfection in a good cast-iron skillet, then drain well on paper towels. When bacon has drained, crumble coarsely, and set aside. Wipe the skillet with paper towels and grease with clarified butter; reheat the skillet over a medium to medium-high flame. Slice the tomato. Spread clarified butter on both sides of the bread. Grate sufficient extra-sharp cheddar cheese. Place one of the bread slices in the skillet, then put the grated cheese on top. Cook for four to five minutes. Add some coarsely-ground black pepper, the bacon, then the tomato slices; place the other bread slice on top, and turn the sandwich. Continue cooking until the cheese is completely melted; usually three and one-half to five minutes. Remove to plate and serve. Bon appetit!
