Guinea fowl are almost certainly kosher, and there is documented evidence that they were eaten by Jews in the recent past. But in order for them to continue to be eaten, written evidence is not enough; a living tradition must be found, i.e. a witness who has personal knowledge of guinea fowl being slaughtered kosher must look at a bird and testify that this is the same species he knows to be kosher. Drs Ari Greenspan and Ari Zivitovsky have been searching for such testimony among older slaughterers from different Jewish communities. I don't know how much success they've had.
