The bubbles you see are only excess air that has been deposited on the surfaces in the tank. They are perfectly normal and will dissappear in time.
As you leave a glass of water out, it warms. As it warms, various gasses (CO2, O2) become less soluble in it. Hence they escape from it in the form of these bubbles!
Anabantid bubbles pop naturally. If the temperature of the water is over 80F the bubbles may pop quicker than the fish can repair its nest. That is why the recommended temperature for Bettas is 78F.

Let your fish eat for 4 minutes. Skim over the water after that and remove exess food. You could also get a filter and stir up the gravel and let the filter suck it up.
You could put another glass panel that fit perfectly into you tank and put gravel on it. You could also get two decorations such as a castle and a skull and lay the glass panel on them, It may look strange but it would work.
Yes, it is very important to rinse gravel before adding it to the tank to get rid of dust and debris. The tiny particles in the gravel can also just plain make a tank look bad until they have a chance to settle over a period of a few days. A large spaghetti strainer works well to rinse gravel and remove any of the smaller particles and debris.
Bubbles decide what they want to do and when the want to pop. So you have no control over how the bubbles act.
