You can't have a smimming pool on a plane for the same reason you can't keep water for use in sprinklers. A body of water would swish around on the plane upsetting the balance, the consequences could be fatal. The weight of any amount of water needed to actually swim in would be enormous, and you'd have to eliminate a great deal of weight elsewhere. But the inertia of the water would cause even more catastrophic problems.
