I'm sure it is possible, just not very safe or comfortable. A saddle seat saddle will not put you in the corrent position to jump.

If you jump really high then yes it is possible to jump off the moon!
A jump bike is more suited toward jumps, tricks and fancy riding. A regular bike is not suited toward these types of activities but mostly for normal riding.
Beginner riders should not jump until they are balanced and comfortable with and without stirrups on the flat (walk, trot, and canter). After that, they can start working on their two point over ground poles. When the rider is ready to jump, crossrails are usually used. The goal is to become comfortable with crossrails and move on to verticals and oxers. A riding helmet is worn while jumping for the same reason a football player wears a helmet...to protect the riders head in case of a fall. Helmets are ASTM certified as protective equipment in case the rider falls and strikes their head on the ground or a jump or the horses hoof strikes the riders head.

You can jump in training, but typically endurance horses are taught to step over obstacles instead of jumping them. Though they may have to jump something that is too high to step over.
