I have done this for years and never had a problem. I have left cheese out overnight and used it. It was fine. That will depend upon the type of cheese and the available microbes - which are unknowns. If the cheese is a type that should be refrigerated, it should not be left out overnight and then consumed, regardless of whether or not it is cooked.
