You've got one throat, one larynx and pharynx, and one voice. However, some singers have been able to create two different tones simultaneously, one high, one low. This may be what you're referring to. Whether talented chanting monks can also do this, I don't know. Answer It has been proven that people actually can have two or more distinct voices, this has been observed in cases of multiple personalities and other circumstances. It has something to do with with activating different areas of your vocal cords. I would assume that monks, with their long history, have learned how to do this and been able to train others who would be their pupils. However, I do not know for sure, as far as monks go.

Did the origins of western music begin with the chanting of monks and of traveling minstrels appear in the middle ages or the renaissance?

Chanting of monks began earlier than the Middle Ages, and was done in the ancient Roman Empire. In fact, there is some evidence that some of the earliest Christian chants were in fact the same as older Jewish chants, possibly dating to Biblical times. The tradition of chanting has continued since. Minstrels appeared in the Middle Ages, though the traditions of bards of various types also goes back to ancient times. The Renaissance came later.
