If you have a graphics card that supports HDMI you can of course connect the PS3 to that card. Will it work at all? most likely not. why not
There are a few possibilities! 1) Your display(graphics) adapter is malfunctioning, try re-installing drivers. 2) Your HDMI cable is defective 3) Your monitor is defective If re-installing the graphics drivers doesn't work, swap out the HDMI cable first (they're super cheap). Then try a different monitor, then swap out your GPU (Graphics Card)

I think the ps3 has the best graphics, because of its blu-ray. The second best graphics I think they are the ones of the xBox 360, its graphics are almost like the ps3 and it can be seen really cool . The wii y think, has the worst next-gen console graphics, it has good graphics bit it is a bit more lower than the ps3 and the xBox. If you don't have an HDTV then your graphics are not as sharp. If you have one and it is not connected except with the PS3 provided cable for connection, then your HDTV is not being used to it's full ability and the graphics are not as sharp.
You don't really need cables. You should first get a converter or update your graphics card so that it has a DVI output, then use a DVI to HDMI cable.
