White rice is a non-whole grain, or refined grain. The bran and germ of white rice have been removed, leaving only the endosperm. Brown rice is a whole grain, containing bran, germ and endosperm.

A high-starch (amylopectin), low-amylose round medium- or short- grain rice is usually used to make risotto. Such rices have the ability to absorb liquids and to release starch and so they are stickier than the long grain varieties. The principal varieties used in Italy are Arborio, Baldo, Carnaroli, Padano, Roma, and Vialone Nano.[1] Carnaroli and Vialone Nano are considered to be the best (and most expensive) varieties, with different users preferring one over the other. They have slightly different properties: for example Carnaroli is less likely to get overcooked than Vialone Nano, but the latter being smaller cooks faster and absorbs condiments better. Other varieties like Roma, Baldo, Ribe and Originario may be used but will not have the creaminess of the traditional dish. These varieties are considered better for soups and other non-risotto rice dishes and for making sweet rice desserts. Rice designations of Superfino, Semifino and Fino refer to the size and shape (specifically the length and the narrowness of the grain) of the grains and not the quality.

Writing on rice, may sound hard and impossible, but actully you can. Really, so this is how to write on rice. You need long grain rice. You can use Vietnamese long rice, but don't use Taiwan short rice. You need a fine tip pen. Stick the grain of rice an a piece of clay. Using the ball point pen, write on the grain of rice. When done, make it into a charm.
long grain rice takes longer to cook than converted rice
If you intend to follow a recipe using long grain rice in the place of Minute Rice, you should cook the long grain rice first. If you don't, the rice will be under-cooked.
