Gluten is a composite of the proteins gliadir and glutenin. These exist, in conjunction with starch, in the endosperms of some grains, notably wheat, rye and barley.

Since the olive is an evergreen shrub that produces fruit and not grains, I think its safe to say that pure olive oil will be gluten free; however I still recommend checking the bottle when purchasing if you require a gluten free diet.

Canola in itself is gluten free.

Some with gluten intolerance do state that they 'feel unwell' after having canola, but that's a separate issue.

What's not a separate issue however is that canola can be grow with wheat, and the possibility of cross-contamination is high. It's up to you to decide what level of cross-contamination you're willing to accept in your food.

All cooking oils are gluten free if they are 100% oil. Although they may be processed in the same facility that may have gluten present, the chances are that the oil didn't come into contact with it.
