Shiman doesn't make bikes, only bike parts. And they have the whole range, from fairly basic stuff to real nice racing equipment. As long as you're aware about what to expect from the grade you've bought Shimano has a good reputation.

IT would very much depend on the vintage and quality of the bike. If it's a fairly recent bike I'd just buy the cheapest Shimano derailleur with the correct hanger (either bolt on or integrated) and the odds are good that it will work.
