Melting is the process of a solid going through a physical change to the liquid state.

Sublimation is the process of a solid going immediately to the gaseous state, skipping the liquid state entirely. You can seesublimation in action by seeing a block of dry ice (frozen carbon dioxide gas) "melt" from a solid into white smoke.
