The sunflower seed is the fruit of the sunflower (Helianthus annuus). The term "sunflower seed" is actually a misnomer when applied to the seed in its pericarp (hull). Botanically speaking, it is more properly referred to as an achene. When dehulled, the edible remainder is called the sunflower kernel.

Remember that sunflowers are Composite flowers, consisting of disc and (sterile) ray florets grouped together on a "flower head". Each disc floret has its own ovary and produces its own seed.

Actually, no, sunflower seeds are not real seeds! Rather, they are the fruit of the sunflower plant. The only reason they are called "sunflower seeds" is because they resemble other seeds.
