RE: Storage -- I swiped this from the original hickory farms string:
"
Hickory Farms® Beef Summer Sausage is good for 7-9 months if kept refrigerated or kept at 70 degrees.
Our Beef Summer Sausage ® may be kept out of refrigeration for up to six weeks, however temperature variances (in excess of 75 degrees) can shorten shelf life. If you are in a warmer climate, shorten non-refrigerated time to protect the quality of the product.
Our natural cheeses; Cheddar, Edam, Havarti and Gouda have a shelf life from 3 - 12 months, depending upon the cheese. Natural cheeses are a perishable item and may be out of refrigeration for up to seven days at normal room temperatures (65-75 degrees), but they should be refrigerated upon receipt.
Our pasteurized cheeses; Hot Pepper Cheese, Smooth N' Sharp, Chedam, Chavarti and Smoky Bar may be left out of refrigeration for longer periods. However, temperature variances above 75 degrees are not advised and the product should be refrigerated to prolong quality."
