Eating one right now: fragrant, like an apple or pear but denser not grainy, sweet, slightly tart, dry (astringent) but still has juice. They are varying degrees of hard/dry depending on ripeness. Quince Jelly . An old English recipe that allows for any quantity of fruit. . Rub any fuzz off the quinces. Cut the fruit into chunks and remove core (no need to peel). . In large pan, cover chopped quince with water and bring to a boil. . Simmer for 40-45 minutes. . Pour stewed fruit into a mus…lin or cheesecloth bag (an old tea towel will do) and drain juice. Drain for at least 4 hours, or overnight. Do not squeeze the bag or the jelly will be cloudy. . Discard fruit. . For every 1 cup of juice, add 3/4 cup of sugar. Quince has a lot of natural pectin, so you don't need to add any. Bring to a boil, stirring constantly, then reduce heat and continue to boil for 20 minutes (approx). To test if jelly is ready, pour a small amount onto a chilled plate. After a moment push with spoon. If it is beginning to set and wrinkles, it is ready. . Pour into prepared jars. probably not - they are a fruit meant to be boiled and made into jam or simmered and reduced into a paste (called membrillo) Raw they are verry astringent and tangy. I don't think you can ripen them to an edible point without rotting them.. I think you could peel them and slow roast them in an ove…n with a little butter and sugar over them, like 250 degrees for a longgggg time.
