Yes, to change the language for UI and keyboard go to Settings > General > International > Language and Keyboard. You can even define the regional format desired (date, time and phone number format)... Ex. I am a native Italian speaker living in the US. My preferred UI language is Italian, but I need both Italian and English keyboards to type my texts and emails... My regional format is set to United States since that is where I live
